Garlic Penne Pasta with Capers
Ingredients
  • Penne Pasta
  • 2 TBSP lightly chopped capers
  • in A handful or two of Oliveschoppedhalf
  • in A box of cherry tomatoesalso choppedhalf
  • 6 Cloves of Garlicsliced thinly, !
  • A handful of Basilchopped roughly
  • 1 TBSP of Olive Oil
  • 1tsp anchovy paste (this could easily be left out if you are grossed out by itbut it’s delicious)
  • salt and pepper to taste
Instructions
  1. Prepare the penne as directed on the box
  2. heat oil and garlic in skillet on medium heat, until garlic turns golden brown
  3. add tomatoes, olives, capers, anchovy paste and simmer until the tomatoes break down into a sauce, stirring occasionally
  4. Toss with drained penne,
  5. Toss in basil leaves and salt & pepper to taste
  6. ENJOY
