Italian Ciabatta Sandwich with Garlic, Tomato, and Cheese Spread

As someone who is 1/4 Italian, I just can’t resist tomatoes, garlic, and cheese!

My refrigerator is always full of tomatoes, I always have a healthy supply of garlic and various cheeses on hand in my pantry, and I am never without olive oil!

I’m always trying new ways of combining these ingredients, and today I came up with this affordable and fresh tasting ciabatta sandwich.

It is a really easy and quick recipe that is perfect for long work days with short lunch breaks.

  • 1 ciabatta bun sliced
  • 10 grams baby lettuce
  • 3 grams garlic peeled and loosely chopped
  • 80 grams mini tomatoes chopped
  • 1 TBSP extra virgin olive oil
  • 5 grams goat cheese
  • 1 pinch sea salt
  • 1 pinch basil dried or fresh; chopped
  • 1 pinch ground black pepper
  • 2 kalamata olives

Ingredients
  • 1 ciabatta bun sliced
  • 10 grams baby lettuce
  • 3 grams garlic peeled and loosely chopped
  • 80 grams mini tomatoes chopped
  • 1 TBSP extra virgin olive oil
  • 5 grams goat cheese
  • 1 pinch sea salt
  • 1 pinch basil dried or fresh; chopped
  • 1 pinch ground black pepper
  • 2 kalamata olives
Instructions
  1. Preheat the oven to 385 degrees
  2. Slice the ciabatta buns lengthwise
  3. Toast on oven rack for 5-8 minutes until it reaches the desired crispy-ness
  4. Chop the garlic and tomatoes
  5. To create the spread, combine garlic, tomatoes, olive oil, and goat cheese in food processor and pulse until well combined
  6. Transfer spread mixture to bowl and combine with basil
  7. Using a knife or a spoon, place spread on ciabatta buns
  8. Place lettuce on sandwich
  9. Sprinkle with salt and pepper to taste
  10. Add kalamata olives for garnish
