As someone who is 1/4 Italian, I just can’t resist tomatoes, garlic, and cheese!
My refrigerator is always full of tomatoes, I always have a healthy supply of garlic and various cheeses on hand in my pantry, and I am never without olive oil!
I’m always trying new ways of combining these ingredients, and today I came up with this affordable and fresh tasting ciabatta sandwich.
It is a really easy and quick recipe that is perfect for long work days with short lunch breaks.

Ingredients
- 1 ciabatta bun sliced
- 10 grams baby lettuce
- 3 grams garlic peeled and loosely chopped
- 80 grams mini tomatoes chopped
- 1 TBSP extra virgin olive oil
- 5 grams goat cheese
- 1 pinch sea salt
- 1 pinch basil dried or fresh; chopped
- 1 pinch ground black pepper
- 2 kalamata olives

Instructions
- Preheat the oven to 385 degrees
- Slice the ciabatta buns lengthwise
- Toast on oven rack for 5-8 minutes until it reaches the desired crispy-ness
- Chop the garlic and tomatoes
- To create the spread, combine garlic, tomatoes, olive oil, and goat cheese in food processor and pulse until well combined
- Transfer spread mixture to bowl and combine with basil
- Using a knife or a spoon, place spread on ciabatta buns
- Place lettuce on sandwich
- Sprinkle with salt and pepper to taste
- Add kalamata olives for garnish
